Tempeh and Asparagus Stir-Fry

Dive into a simple yet delicious Tempeh and Asparagus Stir-Fry, perfect for a healthy, high-protein, and low-carb dinner. This recipe combines the nutty flavour of tempeh with fresh vegetables and aromatic herbs, all cooked in one pan for ease and convenience.

 Ingredients:

  •  400g tempeh, cubed

  • 200g asparagus, trimmed and cut into pieces

  • 1 red bell pepper, sliced

  • 2 tablespoons olive oil

  • 2 garlic cloves, minced

  • 1 tablespoon ginger, minced

  • 2 tablespoons soy sauce or tamari

  • 1 tablespoon sesame oil

  • A handful of fresh basil leaves, torn

  • A few sprigs of fresh thyme

  • Salt and pepper, to taste

  • Sesame seeds, for garnish

Instructions:

  •  In a large pan, heat the olive oil over medium-high heat. Add the tempeh cubes, season with salt, and cook until golden.

  • Add garlic and ginger, cooking until fragrant.

  • Include the asparagus and bell pepper, cooking until just tender.

  • Pour over soy sauce and sesame oil, mixing well.

  • Stir in basil and thyme leaves, seasoning with salt and pepper.

  • Garnish with sesame seeds before serving.
