Sweet Potato and Black Bean Bowl

Ingredients:
- Sweet potatoes, peeled and cubed: 300g (about 2 cups)
- Black beans, cooked and drained: 200g (1 cup)
- Fresh kale, chopped: 75g (2.5 oz)
- Red bell pepper, diced: 1 medium (about 150g or 5 oz)
- Avocado, sliced: 1 medium
- Olive oil: 2 tablespoons (30 ml)
- Lime, juiced: 1
- Ground cumin: 1 teaspoon (5 ml)
- Paprika: 1 teaspoon (5 ml)
- Fresh coriander (cilantro), chopped: A handful
- Salt and pepper, to taste
Instructions:
1. Preheat your oven to 200°C (400°F). Toss the sweet potato cubes with one tablespoon of olive oil, cumin, paprika, salt, and pepper. Spread on a baking sheet and roast for 25 minutes, or until tender and golden.
2. In a large bowl, mix the roasted sweet potatoes, black beans, and red bell pepper. Add the chopped kale, drizzle with the remaining olive oil and lime juice, and toss until the kale begins to soften.
3. Serve the mixture in bowls, topped with sliced avocado and a sprinkle of fresh coriander.
