Kimchi Cream Cheese Toast with Poached Egg
Start your morning with a burst of flavour! This delectable toast combines the zesty kick of kimchi with creamy cheese, topped with a perfectly poached egg. Ingredients
• 1½ tsp apple cider vinegar
• 1 egg
• 2 tbsp regular cream cheese
• 30g (about ¼ cup) kimchi, chopped (see below recipe)
• 50g (1¾ oz) sourdough bread, toasted
• Sea salt & black pepper, to taste
• 1 stalk green onion, sliced and some parsley to top with.
Instructions
Bring a pot of water to a rolling boil and add the vinegar.
Stir the water with a spoon to create a whirlpool.
Carefully add your egg to the water. Let it cook for 3-4 minutes, or until it’s done to your liking.
Use a slotted spoon to gently remove the egg from the water, placing it on a plate lined with a paper towel to absorb excess liquid.
In a small bowl, mix together the cream cheese and chopped kimchi.
Spread the cream cheese and kimchi mixture on the toasted sourdough bread.
Top with the poached egg, season with salt and pepper and garnish with sliced green onions and parsley.
