I decided to treat myself to a delightful dessert last night, and it turned out to be a massive hit! Here's how you can recreate this scrumptious Dark Chocolate and Greek Yogurt Mousse at home, using ingredients readily available in your kitchen. This recipe perfectly balances rich, dark chocolate with the creamy tang of Greek yogurt, offering a luxurious treat that's not overly sweet.

Ingredients:

  • 4 oz (113g) Dark Chocolate (80% Cocoa or higher), chopped

  • 1 1/2 cups (355ml) Plain Greek Yogurt

  • 1/4 cup (25g) Raw Cocoa Powder

  • 1 tbsp (15ml) Raw Honey (optional)

  • 1/2 tsp (2.5ml) Vanilla Extract

  • 1/8 tsp Sea Salt

Instructions:

  1. Begin by setting up your double boiler. Alternatively, you can fill a small pot halfway with water and rest a heat-safe bowl on top to create a similar effect. Bring the water to a gentle boil.

  2. Place the chopped dark chocolate into the bowl or top section of the double boiler. Allow the chocolate to melt, stirring it occasionally to ensure a smooth consistency. Once melted, remove from the heat and let it cool slightly.

  3. In a stand mixer equipped with a whisk attachment, combine the slightly cooled melted chocolate, plain Greek yogurt, raw cocoa powder, raw honey, vanilla extract, and sea salt.

  4. Whip the mixture until it becomes smooth and creamy. This will ensure your mousse has the perfect texture.

  5. Once whipped to perfection, portion the mixture into individual containers or jars. This not only makes serving easier but also adds a touch of elegance if you're presenting to guests.

  6. Place the filled containers or jars into the refrigerator. Leave them to set overnight, or for a minimum of eight hours, to achieve the ideal mousse consistency.
