Quinoa and Black Bean Salad

Quinoa and Black Bean Salad

Ingredients:

  • 1 cup quinoa

  • 2 cups water

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 cup cherry tomatoes, halved

  • 1 cup beets, diced

  • 1 red bell pepper, diced

  • 1 avocado, diced

  • 1/4 cup red onion, finely chopped

  • 1/4 cup fresh cilantro, chopped

  • Juice of 2 limes

  • 2 tablespoons olive oil

  • Salt and pepper to taste

Instructions:

  • Rinse the quinoa under cold water. In a medium pot, combine quinoa and water. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the water is absorbed and the quinoa is tender. Let it cool.

  • In a large bowl, combine the cooked quinoa, black beans, cherry tomatoes, beets, red bell pepper, avocado, red onion, and cilantro.

  • In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.

  • Pour the dressing over the salad and toss to combine.

  • Serve immediately or refrigerate for up to 2 days.
