        •       1/2 cup (120 ml) cottage cheese
        •       1/4 cup (60 ml) diced red bell pepper
        •       1/4 cup (60 ml) diced onion
        •       1 tablespoon (15 ml) olive oil
        •       Salt and pepper, to taste

Instructions:

        1.      Heat olive oil in a pan over medium heat.
        2.      Sauté onion and red bell pepper until soft.
        3.      Whisk eggs, salt, and pepper in a bowl.
        4.      Add spinach to the pan, cook until wilted.
