Ingredients:
• 2 tbsp olive oil
• 3 cloves garlic, minced
• 1 medium onion, finely chopped
• 1 can (400g) chickpeas, drained and rinsed
• 4 cups (120g) fresh spinach leaves
• 1 tsp ground cumin
• 1 tsp smoked paprika
• 1/2 tsp ground turmeric
• Salt and pepper, to taste
• Juice of 1 lemon
• A handful of fresh parsley, roughly chopped
• A handful of fresh coriander (cilantro), roughly chopped, plus extra for garnish
• 2 tbsp sunflower seeds
• 2 tbsp pumpkin seeds
Instructions:
Preparation: In a large frying pan, warm the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until soft and translucent, about 3-5 minutes.
Add Spices: Stir in the cumin, smoked paprika, and turmeric, cooking for an additional minute to release the fragrant aromas.
