Spinach and Chickpea Stir-Fry with Fresh Herbs and Seeds

 This Spinach and Chickpea Stir-Fry enriched with fresh herbs and the nutty crunch of sunflower and pumpkin seeds, this dish is a symphony of tastes and textures that not only satisfy your hunger but also support your wellbeing. Perfect for a quick lunch, it’s designed to keep your blood sugar levels in check without skimping on flavour.

 This Spinach and Chickpea Stir-Fry blends fresh herbs and crunchy seeds for a flavorful, nutritious meal. Ideal for a quick lunch, it balances blood sugar without compromising taste.

 Ingredients:

         •       2 tbsp olive oil

        •       3 cloves garlic, minced

        •       1 medium onion, finely chopped

        •       1 can (400g) chickpeas, drained and rinsed

        •       4 cups (120g) fresh spinach leaves

        •       1 tsp ground cumin

        •       1 tsp smoked paprika

        •       1/2 tsp ground turmeric

        •       Salt and pepper, to taste

        •       Juice of 1 lemon

        •       A handful of fresh parsley, roughly chopped

        •       A handful of fresh coriander (cilantro), roughly chopped, plus extra for garnish

        •       2 tbsp sunflower seeds

        •       2 tbsp pumpkin seeds

 Instructions:

  •  Preparation: In a large frying pan, warm the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until soft and translucent, about 3-5 minutes.

  •  Add Spices: Stir in the cumin, smoked paprika, and turmeric, cooking for an additional minute to release the fragrant aromas.

  • Introduce Chickpeas: Mix in the chickpeas, frying until they’re lightly golden and well-coated with the spices, roughly 5-7 minutes.

  • Incorporate Spinach: Gradually add the spinach leaves, stirring until wilted. If needed, add the spinach in stages to fit your pan.

  • Season: Season with salt and pepper to your liking, then brighten the dish with a squeeze of fresh lemon juice.

  •  Herbs and Seeds: Off the heat, fold in the chopped parsley and coriander, along with the sunflower and pumpkin seeds, mixing well to distribute the flavours and textures throughout the dish.
