Savoury Oatmeal with Avocado and Poached Egg
This dish combines the heartiness of oats with the creamy texture of avocado and the protein-packed goodness of a poached egg, making it an excellent option for stabilising blood sugar while keeping your taste buds entertained.
Savoury Oatmeal with Avocado and Poached Egg
Ingredients:
1/2 cup (40g) oats
1 1/4 cups (300ml) water or vegetable broth (for a richer flavour)
1 ripe avocado
1 egg
1 tablespoon olive oil
Salt and pepper, to taste
A pinch of chilli flakes (optional)
Fresh herbs (such as parsley or chives), for garnish
Instructions:
1. Prepare the Oatmeal: In a small saucepan, bring the water or vegetable broth to a boil. Add the oats and a pinch of salt, reduce the heat to low, and simmer, stirring occasionally, until the oats are soft and have absorbed most of the liquid (about 5-7 minutes).
2. Cook the Poached Egg: Meanwhile, bring a pot of water to a light simmer. Crack the egg into a cup, then gently slide it into the simmering water. Cook for 3-4 minutes for a soft yolk, or until desired doneness. Use a slotted spoon to remove the egg from the water and set it aside on a paper towel.
3. Prepare the Avocado: Cut the avocado in half, remove the pit, and scoop out the flesh. Slice or mash the avocado, depending on your preference.
4. Assemble the Dish: Spoon the cooked oatmeal into a bowl. Top with the sliced or mashed avocado and the poached egg. Drizzle with olive oil and season with salt, pepper, and chilli flakes (if using).
5. Garnish and Serve: Sprinkle with fresh herbs for a burst of freshness and additional flavour. Enjoy your savoury oatmeal warm.
