Kickstart your morning with a quick and healthy breakfast. This dish combines fluffy scrambled eggs, creamy avocado, crunchy nuts, and fresh greens. It's an easy way to fuel up with good taste and nutrition, all in one go. Perfect for busy mornings!

 Ingredients

  • 2 fresh, free-range egg

  • 1 ripe avocado

  • A handful of mixed salad greens (like spinach, rocket, or watercress)

  • A small handful of nuts (walnuts, almonds, or pecans), roughly chopped

  • Salt and pepper

  • A pinch of chilli flakes (optional)

  • Fresh coriander (optional)

  • A drizzle of extra virgin oil

  • A splash of lemon juice (optional)

 Instructions

  • Halve the avocado, remove the stone, and scoop the flesh into a bowl. Lightly mash it with a fork, or chop, seasoning with salt and pepper to taste. Set aside.

  • In a separate bowl, whisk the eggs with a pinch of salt and pepper

  • Heat a non-stick pan over medium heat and pour in the beaten eggs. Gently stir with a spatula, allowing them to cook and scramble. Remove from heat when they’re softly set and slightly runny; they’ll continue to cook in their residual heat.

  • Toss the salad greens in a bowl with the nuts, a drizzle of olive oil, and a splash of lemon juice if you’re using it. Season with salt and pepper to taste.

  • Serve the scrambled eggs on a plate, topped with the mashed avocado. Add the salad and nuts mixture on the side.

  • Garnish with chilli flakes, fresh coriander, and an extra drizzle of olive oil if desired.
