Ingredients List

        •       2 medium eggs
        •       1 tbsp milk
        •       40g sauerkraut
        •       1 slice of wholemeal bread or sourdough (toasted)
        •       1 spring onion, finely sliced
        •       Pinch of togarashi (optional)

Cooking Steps

1. In a bowl, whisk the eggs and milk together, adding a pinch of salt. Set your non-stick pan over low heat, and pour in your egg mix. Leave it still for about 30 seconds, then give it a gentle swirl. Keep cooking for an extra 2 mins.

2. Fold in the sauerkraut, breaking and scrambling the eggs as you mix. Serve on top of your toasted bread. Finish it off with slices of spring onion and, if you’re up for it, a sprinkle of togarashi.
