Salmon Salad Niçoise

 Embrace the best of both worlds with this versatile Salad Niçoise. Whether you’re a seafood lover or a vegetarian, this dish caters to all, featuring both succulent salmon and vegetarian options. Packed with vibrant vegetables, heart-healthy fats, and an array of proteins, it’s a perfect nutritious and satisfying meal.

 Ingredients:

         •       4 salmon fillets (150g each) and/or 4 pieces of firm tofu (150g each) or grilled halloumi

        •       1.1 lbs (500g) potatoes, halved

        •       7 oz (200g) green beans, trimmed

        •       4 eggs (boiled) or 4 ripe avocados, sliced (as a vegetarian alternative to eggs)

        •       2 handfuls of mixed salad leaves

        •       1 red onion, thinly sliced

        •       2 tbsp capers, rinsed

        •       12 cherry tomatoes, halved

        •       50g black olives, pitted

 Dressing:

         •       3 tbsp extra-virgin olive oil

        •       1 tbsp red wine vinegar

        •       1 tsp Dijon mustard

        •       Juice of 1 lemon

        •       Salt and black pepper, to taste

 Instructions:

  •  Preheat your grill or oven. Season the salmon fillets with salt and pepper, then grill until just cooked through and flaky. For the vegetarian option, grill the tofu or halloumi until golden and firm on each side.

  •  Hard boil the eggs. Boil the new potatoes in salted water until they are tender, then drain. In another pot, blanch the green beans for 2-3 minutes, then refresh in ice-cold water to retain their vibrant colour and crisp texture.

  • Slice the eggs or slice the avocados; these will serve as a nutritious and creamy substitute for those opting out of eggs.

  • Whisk together the olive oil, red wine vinegar, Dijon mustard, lemon juice, and a pinch of salt and pepper to create the dressing

  • On a large platter, arrange the salad leaves, cooked potatoes, blanched green beans, eggs or sliced avocados, thinly sliced red onion, capers, halved cherry tomatoes, and olives.

  •  Place the grilled salmon and/or tofu/halloumi on top, offering a delightful choice between the sea’s bounty and earth’s harvest.

  • Drizzle the entire salad with the dressing, or serve it on the side for individual preference.
