Savoury Salsa & Chickpea Protein Muffins

 These muffins are perfect for a quick snack or a light meal. They are delicious and easy to make. You can choose between a quick shop-bought salsa or a zesty homemade version.

 Ingredients:

         •       3 large eggs, whisked

        •       60ml (¼ cup) unsweetened almond milk

        •       60ml (¼ cup) salsa (homemade or shop-bought)

        •       160g (⅔ cup) cooked chickpeas, drained

        •       Fresh parsley, finely chopped

 Instructions:

         1.      Preheat your oven to 190°C (375°F). Line a muffin tray with liners or use a silicone tray.

        2.      Mix the whisked eggs, almond milk, salsa, chickpeas, and parsley together in a bowl.

        3.      Divide the mixture evenly among the muffin cups.

        4.      Bake for 25 minutes or until firm to the touch.

        5.      Enjoy your delicious and wholesome muffins!
