Savoury Miso Lentil Soup with Collard Greens and Purple Cabbage

Hello everyone! In today’s recipe, I’m diving into a comforting Miso Lentil Soup, packed with the goodness of collard greens and purple cabbage. It’s a simple, nourishing dish that’s perfect for any day of the week. Let’s get started and bring some delicious warmth to our tables!

Savoury Miso Lentil Soup with Collard Greens and Purple Cabbage

Ingredients:

        •       Water: 950 ml (3 cups) and 1 cup of vegetable stock
        •       Miso Paste: 1 1/2 tablespoons (22 ml)
        •       Coconut Aminos: 1 tablespoon (15 ml)
        •       Garlic: 2 cloves, small, chopped
        •       Dry Red Lentils: 100 grams (1/2 cup), rinsed and drained
        •       Lemon: Juice of 1/2 medium lemon
        •       Collard Greens: 150 grams (1 1/2 cups), sliced
        •       Purple Cabbage: 200 grams (2 cups), shredded
        •       Sea Salt & Black Pepper: to taste

Directions:

        1.      In a large pot, bring 950 ml of water and vegetable stock to a boil.
        2.      Whisk in the miso paste until fully incorporated, then reduce heat to a simmer.
        3.      Stir in the coconut aminos, chopped garlic, and red lentils. Cover the pot and let it cook for 20 minutes.
        4.      After 20 minutes, add the lemon juice, sliced collard greens, and shredded purple cabbage. Season with salt and pepper to taste.
        5.      Continue cooking until the vegetables reach your desired softness.
        6.      Ladle the soup into bowls and serve warm.
