Egg Breakfast Wrap
Ingredients:
• 2 large eggs
• 1 whole wheat tortilla or wrap
• 60ml (1/4 cup) of chopped vegetables (like bell peppers , spinach , tomatoes
• 15ml (1 tablespoon) of olive oil
• Salt and pepper, to taste
• Fresh herbs and seeds (optional, for garnish)
Directions:
1. Heat the olive oil in a non-stick frying pan over medium heat.
2. Sauté the chopped vegetables until tender.
3. In a bowl, whisk the eggs and season with salt and pepper.
4. Add the beaten eggs to the pan with the vegetables.
5. Gently scramble the eggs until fully cooked.
6. Warm the whole wheat tortilla or wrap in a separate pan or microwave.
7. Spoon the scrambled egg and vegetable mix onto the tortilla or wrap.
8. Roll the tortilla tightly to enclose the filling.
