Roasted Veggie & Grain Bowl with Zesty Herb Dressing

 Enjoy the easy wholesome and hearty salad recipe. It’s a versatile dish, where you can choose between farro, quinoa, or millet to suit your palate or pantry. Perfect for a nourishing lunch or a light, satisfying dinner.

 Ingredients:

         •       120g Farro (uncooked, rinsed, or substitute with quinoa or millet)

        •       1 small Honeynut Squash (seeds removed, chopped)

        •       1/2 small Cauliflower (cut into small florets)

        •       1/2 small head of Broccoli (cut into small florets)

        •       60ml Extra Virgin Olive Oil (divided)

        •       Sea Salt & Black Pepper (to taste)

        •       Juice of 1 medium Lemon

        •       1 Garlic clove (minced)

        •       3 tbsp Parsley (chopped)

        •       1 tbsp Fresh Dill (chopped)

        •       1 medium Apple (chopped)

        •       A handful of Sunflower Seeds

Instructions

  • Begin by cooking the farro according to the package instructions. Once cooked, set it aside to cool.

  • Meanwhile, preheat your oven to 200°C. Line a baking tray with parchment paper for easy clean-up.

  • Prepare the veggies: Place the chopped squash, cauliflower, and broccoli on the tray. Drizzle with half of the olive oil and season generously with salt and pepper. Give everything a good toss to coat, then spread out in a single layer.

  • Roast in the preheated oven for 20-25 minutes. Remember to turn the veggies halfway through the cooking time. They’re done when they’re beautifully golden and tender to the fork’s touch.

  • While the veggies are roasting, prepare the dressing. In a jar, combine the remaining olive oil, lemon juice, minced garlic, chopped parsley, dill, and a pinch of salt and pepper. Secure the lid and give it a vigorous shake until everything is well combined.

  • In a large mixing bowl, add the cooked farro, roasted veggies, and chopped apple. Shake the dressing once more, then pour it over the salad. Toss everything together to ensure each bite is flavourfully dressed.

  • Sprinkle over a handful of sunflower seeds for a delightful crunch.

  • Serve your gorgeous salad in bowls and enjoy the symphony of flavours!
