  • 1/2 cup (120 ml) organic tinned coconut milk

  • 1 cup (240 ml) freshly brewed espresso

  • 1/2 teaspoon (2.5 ml) coconut crystals (optional)

  • A pinch of sea salt

For the Smoothie:

  • 1 cup (240 ml) espresso

  • 1 cup (240 ml) coconut milk

  • 1 tablespoon (15 ml) coconut butter

  • A hint of vanilla powder

  • 4 protein cubes

  • 4 ice cubes

Steps:

  1. Prepare the Protein Cubes: Start by mixing the gelatin with the cold coconut milk until it dissolves completely, forming a thick paste. Let it sit for a few minutes, then add the hot espresso and stir well.

  2. Add Sweetness and Salt: If using, mix in the coconut crystals and sea salt.

  3. Freeze: Pour the mixture into ice cube trays and freeze for about 30 minutes.

  4. Extra Cubes: This recipe makes more protein cubes than needed for one smoothie, perfect for future use.

  5. Blend the Smoothie: In a blender, combine espresso, coconut milk, coconut butter, vanilla powder, 4 protein cubes, and 4 ice cubes. Blend until creamy.
