Niçoise Inspired Omelette

 Serves 2 | 30 Minutes

 Elevate your breakfast or lunch with this vibrant and nutritious Omelette. Packed with fresh vegetables, tuna and a zesty dressing, this dish is not only delicious but also bursting with nutrients to keep you energised throughout the day. Perfect for a quick and healthy meal!

Ingredients:

    •    75g green beans

   •    6 eggs

   •    4 new potatoes

   •    1 tablespoon Dijon mustard

   •    1 tablespoon white wine vinegar

   •    ½ clove garlic, minced

   •    1 red onion

   •    75g cherry tomatoes

   •    1 tablespoon capers

   •    ½ tablespoon black olives

   •    ½ tablespoon chopped fresh parsley

   •    1 can of tuna in olive oil (200g)

   •    Olive oil

   •    Salt, black pepper

 Method:

    1.    Cook the Green Beans:

   •    Boil the green beans in salted water for 3 minutes, drain, and set aside. Whisk the eggs and ½ teaspoon of salt until smooth. Dice the potatoes into cubes (2x2 cm) and boil in salted water for 5 minutes. Season with ½ teaspoon of salt.

   2.    Prepare the Omelette:

   •    Pour half of the egg mixture into the pan and stir gently to form a loose scramble. Let it set over medium heat until firm, then cook until fully set as an omelette. Repeat with the remaining potatoes and egg mixture.

   3.    Make the Dressing:

   •    Mix the mustard, vinegar, and garlic in a bowl. Gradually whisk in 3 tablespoons of olive oil to form a dressing. Season with ½ teaspoon of salt and ½ teaspoon of black pepper.

   4.    Assemble the Salad:

   •    Slice the onion thinly. Halve the tomatoes. Mix the beans, onion, tomatoes, capers, olives, and parsley with the dressing. Add the tuna.

   5.    Serve:

   •    Top the cooked omelettes with the salad and tuna.
