Lemon-Herb Salmon with Thyme Cabbage

This is a simple yet scrumptially healthy recipe that’s perfect for anyone looking to enjoy a delightful dinner without the fuss.  Lemon-Herb Salmon with Thyme Cabbage 

Ingredients: 

        •       Juice of 1/2 a medium Lemon (about 1 1/2 tablespoons)

        •       1 tablespoon Wholegrain Mustard

        •       Sea Salt & Freshly Ground Black Pepper, to taste

        •       2 cups (about 150g) Green Cabbage, coarsely chopped

        •       1 tablespoon Fresh Thyme, finely chopped

        •       12 ounces (about 340g) Salmon Fillet

        •       2 tablespoons Fresh Dill, roughly chopped

        •       A handful of Fresh Parsley, chopped (for garnish)

 Instructions:

  •  Preheat your oven to 400ºF (205ºC) and get a baking tray ready with parchment paper.

  • In a big bowl, mix the lemon juice, wholegrain mustard, and a dash of salt and pepper. This is your flavour base.

  • Brush a bit of this mix over your salmon and put it to the side.

  •  Throw the cabbage in the bowl with the rest of the mix, toss it well, and then lay it out on your tray. Sprinkle with thyme and let it roast for 20 minutes, giving it a shake halfway through.

  • After that, place your salmon on the tray with the cabbage and bake for another 14-15 minutes, until the salmon is perfectly cooked.

  • Serve it up with a sprinkle of dill and parsley on top for that extra fresh kick.
