Hearty Turmeric & Chicken Winter Stew

This delightful dish not only fills your home with an inviting aroma but also provides a nutritious boost, thanks to its high-protein content and the health benefits of turmeric. It's wonderfully easy to make and fantastic for meal prep, as it keeps well in both the fridge and freezer. Let's get cooking and bring some warmth and nourishment to your table!

Ingredients:

  • Olive oil: 2 tablespoons (30ml)

  • Boneless chicken thighs: 1.5 pounds (680 grams), cut into 1-inch pieces

  • Onion: 1 large, finely chopped

  • Carrots: 2, peeled and sliced

  • Celery stalk: 1, sliced

  • Garlic cloves: 4, minced

  • Ginger root: 1-inch piece (2.5 cm), peeled and minced

  • Ground turmeric: 2 teaspoons (or fresh turmeric root, minced)

  • Ground cumin: 1/2 teaspoon

  • Ground coriander: 1/2 teaspoon

  • Salt and black pepper: to taste

  • Plain flour: 2 tablespoons (30g)

  • Sweet potatoes: 2 medium-sized, peeled and cubed

  • Chicken broth: 3.5 cups (830ml)

  • Coconut milk: 1/2 cup (120ml)

  • Fresh spinach: 2 cups, roughly chopped

  • Fresh parsley: for garnishing

  • Fresh cilantro: for garnishing

Method:

  1. Season the chicken thigh pieces with salt and pepper. In a large pot, heat the olive oil over medium-high heat and brown the chicken for about 4-5 minutes. Remove and set aside.

  2. Reduce the heat to medium, add onions, carrots, and celery to the pot, and cook until they are soft.

  3. Stir in the minced garlic, ginger, turmeric, cumin, coriander, and additional salt and pepper. Cook for a minute to release the fragrances.

  4. Return the chicken to the pot, sprinkle over the flour, and stir well. Add the cubed sweet potatoes.

  5. Pour in the chicken broth, stirring to combine and loosen any tasty bits from the pot's bottom.

  6. Bring to a low boil, then simmer for 25-30 minutes until the chicken is tender and the sweet potatoes are easily pierced with a fork.

  7. Add the coconut milk and spinach, cooking for another 5 minutes until the spinach has wilted. Adjust seasoning if needed.

  8. Serve hot, garnished with fresh parsley and cilantro.

Storage:

  • Refrigerate leftovers in an airtight container for up to 5 days.

  • Freeze for up to 3 months for longer storage.
