 Ingredients

         •       2 cups (480 ml) cooked chicken breast, shredded

        •       1/2 cup (120 ml) Greek yogurt

        •       1/4 cup (60 ml) mayonnaise (optional for extra creaminess)

        •       1/2 cup (120 ml) celery, finely chopped

        •       1/2 cup (120 ml) grapes, halved

        •       1/4 cup (60 ml) almonds, chopped

        •       1 teaspoon (5 ml) Dijon mustard

        •       1 teaspoon (5 ml) lemon juice

        •       Salt and pepper to taste

        •       Mixed greens or lettuce leaves for serving

 Instructions

  • Prepare the Chicken: In a large bowl, combine the shredded chicken breast and Greek yogurt. If you prefer a creamier texture, mix in the mayonnaise.

  • Add Crunch and Sweetness: Stir in the chopped celery, halved grapes, and chopped almonds. These add a delightful crunch and a hint of sweetness to the salad.

  • Season and Mix: Add the Dijon mustard and lemon juice, mixing well. Season with salt and pepper to taste
