Gluten And Dairy Free Orange Cake

I made this orange cake a few days ago and loved it. It is so moist and moreish and is also gluten and dairy-free making it perfect when you want to treat yourself to something delicious and sweet. It’s a great all round cake that the whole family will love.

Ingredients

2 oranges, washed (organic if possible)

250 g caster sugar.

6 free range eggs

250 g almond meal

1 tsp baking powder

icing sugar, to serve

Almond flakes to serve (optional)

Directions

1. Bring a large pan of water to the boil. Wash the oranges and cook in the boiling water for 2 hours. Drain, allow to cool to room temperature, then puree the oranges.

2. Preheat the oven to 160°C. Grease and line a 22 cm spring form cake tin with baking paper.

3. Beat the eggs and caster together.

4. Stir in the orange puree then the almond meal and baking powder.

5. Pour the batter into the prepared cake tin. Bake for 1-1¼ hours, until the top is golden and when you insert a skewer into the centre it comes out clean.

6. Allow to cool in the baking tin. Dust with icing sugar and almond flakes (optional) and cut into slices to serve. Enjoy!
