Dark Chocolate & Nut Energy Bites

For those weekend moments when a little something sweet is in order, my Dark Chocolate & Nut Energy Bites are a delightful pick. Blending the rich taste of dark chocolate with a variety of nuts, these bites are a nutritious and satisfying treat. Perfect for a modest indulgence, they embody the essence of moderation. Simple to make and enjoyable to eat, they're a wonderful way to add a touch of sweetness to your weekend while staying mindful of health.

Ingredients:

        1.      100g dark chocolate (75% cocoa or higher)
        2.      150g mixed nuts (e.g. almonds, walnuts, hazelnuts)
        3.      50g chia seeds
        4.      75g desiccated coconut
        5.      Pinch of sea salt
        6.      1 tsp vanilla extract

Directions:

  1. In a food processor, blend the mixed nuts until they are coarsely ground.

  2. Melt the dark chocolate in a heatproof bowl over a pot of simmering water.

  3. Once melted, remove from heat and stir in the vanilla extract.

  4. Add the ground nuts, chia seeds, desiccated coconut, and sea salt to the chocolate mixture. Mix thoroughly until combined.

  5. Using your hands, shape the mixture into small bite-sized balls and place them on a tray lined with parchment paper.

  6. Refrigerate for at least an hour, or until they are firm.

  7. Store in an airtight container in the fridge for up to a week.
