Carrot-Infused Cauliflower Rice Porridge

 Ingredients: 

        •       240 ml (1 cup) Cauliflower Rice

        •       1 Carrot, finely shredded

        •       120 ml (1/2 cup) Canned Coconut Milk, full fat

        •       120 ml (1/2 cup) Water

        •       1/2 tsp Cinnamon

        •       2 tbsp Pitted Dates, chopped

        •       60 ml (1/4 cup) Unsweetened Coconut Yogurt

        •       2 tbsp Pumpkin Seeds

        •       2 tbsp Ground Flaxseed

 Instructions: 

  • Combine all the ingredients, excluding the coconut yogurt, in a small pot and bring to a boil.

  • Lower the heat to simmer and cook for seven minutes or until the liquid starts to thicken.

  • Turn off the heat and allow the mixture to sit for three minutes to set.

  • Pour the porridge into a bowl and garnish with the coconut yogurt. Ready to serve and enjoy!
