 Avocado and Chickpea Lettuce Wraps

 Ingredients:

         •       Chickpeas (canned): 1 can (400g), drained and rinsed

        •       Avocado: 1, ripe

        •       Cherry tomatoes: 1/2 cup (about 100g), halved

        •       Red onion: 1/4 cup (about 40g), finely chopped

        •       Lemon juice: 1 tablespoon (about 15ml)

        •       Olive oil: 1 tablespoon (about 15ml), extra virgin

        •       Fresh coriander (cilantro): 2 tablespoons, chopped

        •       Salt and pepper: to taste

        •       Large lettuce leaves (e.g., Romaine or Butter lettuce): 4-6 leaves, washed and dried 

Instructions

  • In a medium bowl, mash the avocado. Add the lemon juice, olive oil, salt, and pepper, and mix until well combined.

  • Fold in the chickpeas, cherry tomatoes, red onion, and fresh coriander until evenly distributed

  • Lay out the lettuce leaves on a flat surface. Divide the avocado and chickpea mixture evenly among the leaves.

  • Carefully fold the sides of the lettuce leaves over the filling and then roll them up to encase the filling snugly.
