Amaranth Granola

Start your day the right way with my delicious Amaranth Granola recipe!

Ladies, did you know that amaranth is a powerful grain its packed with essential nutrients and combined with nuts & seeds, this Amaranth Granola is your perfect breakfast companion. Not only is it delicious, but it’s also an excellent source of plant-based protein and fibre to kickstart your day!

  Ingredients:

         •       250g amaranth (soaked 12-24 hours)

        •       250g mixed nuts & seeds (soaked 12-24 hours)

        •       2 tbsp virgin coconut oil

        •       1 tbsp vanilla essence

        •       2 tsp cinnamon

        •       1 tsp salt

        •       Berries (optional topping)

  Instructions:

        1.      Preheat oven to 325°F (160°C).

        2.      Thoroughly drain the soaked amaranth and nuts/seeds.

        3.      Mix amaranth, nuts & seeds, coconut oil, vanilla essence, cinnamon, and salt in a bowl.

        4.      Evenly spread the mixture on a baking sheet.

        5.      Bake for 25-30 minutes until golden, stirring occasionally.

        6.      Allow to cool.

        7.      Transfer to an airtight container for storage.

        8.      Serve with your preferred milk and optionally top with fresh berries.
