Zesty haddock with crushed potatoes & peas

Ingredients:
Potatoes: 600g (about 1.3 lbs) unpeeled, sweet potatoes also work well.
Frozen Peas: 140g (5 oz)
Extra-Virgin Olive Oil or Coconut Oil: 2½ tbsp
Lemon: Juice and zest of ½ lemon
Capers: 1 tbsp, roughly chopped
Chives: 2 tbsp, snipped
Haddock or Chunky White Fish Fillets: 4 fillets, about 120g (4 oz) each
Broccoli or Vegetables of Your Choice: to serve
Fresh Herbs of Your Choice
Instructions:
1. Prepare the Potatoes:
• Boil the potatoes in salted water until they are tender but still firm. Drain and let them cool slightly before crushing them lightly with a fork.
2. Cook the Peas:
• While the potatoes are boiling, cook the peas in boiling water for about 3 minutes, or until tender. Drain and set aside.
3. Make the Dressing:
• In a small bowl, whisk together the olive oil (or coconut oil), lemon juice and zest, capers, and chives. Set aside.
4. Cook the Fish:
• Season the fish fillets with salt and pepper. Heat a non-stick frying pan over medium heat and add a little oil. Place the fish fillets in the pan and cook for about 4 minutes on each side or until cooked through.
5. Combine and Serve:
• Mix the crushed potatoes with the peas and half of the dressing. Serve the fish on top of the potato and pea mixture, drizzled with the remaining dressing. Accompany with steamed broccoli or your choice of vegetables and sprinkle with fresh herbs.
