Tofu and Zucchini Green Curry - A One-Pan Wonder

Savour the ease and flavour of this Zesty Tofu and Zucchini Green Curry, all cooked in a single pan for a hassle-free, delightful meal.

Ingredients:

        •       1 tbsp Extra Virgin Olive Oil
        •       11 ozs (315 grams) Tofu (firm, diced)
        •       2 Zucchini (medium, chopped)
        •       1 3/4 cups (420 ml) Canned Coconut Milk (full fat)
        •       3 tbsps Lime Juice
        •       1/4 cup (60 ml) Green Curry Paste
        •       2 tbsps Coconut Sugar
        •       1/2 tsp Sea Salt
        •       2 Jalapeño Peppers (thinly sliced)
        •       1/2 cup (120 ml) Cilantro (chopped)

Instructions:

        1.      Heat the oil in a large pot or deep pan over medium heat. Add the tofu and cook, stirring occasionally, for 3-5 minutes or until it starts to brown and become crispy.
        2.      Add the zucchini and continue cooking for 3-4 minutes or until slightly softened.
        3.      Stir in the coconut milk, lime juice, curry paste, coconut sugar, and salt. Simmer for 2-3 minutes.
        4.      Add the jalapeño and cook, stirring frequently, for another 3 minutes or until the zucchini is fork-tender.
        5.      Divide the curry between bowls and garnish with cilantro. Enjoy!
