Spinach and Yoghurt Dip with Pea Pesto and a Veggie Platter

When you’re hosting a gathering, offering snacks that are both delectable and nourishing can truly elevate the experience. This delightful duo of dips – a creamy spinach and yoghurt blend alongside a vibrant pea pesto – serves as a perfect centrepiece for a platter of fresh, crunchy vegetables.

 Spinach and Yoghurt Dip with Pea Pesto and a Veggie Platter

 Ingredients:

 For the Spinach and Yoghurt Dip: 

        •       2 cups (about 60g) Baby Spinach

        •       1 cup (240ml) Plain Greek Yoghurt

        •       Sea Salt & Black Pepper (to taste) 

For the Pea Pesto: 

        •       1 cup (150g) Frozen Peas, thawed

        •       1 handful Fresh Basil Leaves

        •       2 tbsp (30ml) Extra Virgin Olive Oil

        •       2 tbsp (30ml) Water

        •       1 clove Garlic

        •       Salt & Pepper, to taste 

For the Veggie Platter: 

        •       1 large Carrot, cut into sticks

        •       1/2 large Cucumber, cut into sticks

        •       2 stalks Celery, cut into sticks

        •       1 medium Yellow Bell Pepper, sliced

        •       1/2 head Cauliflower, cut into florets

 Instructions: 

        1.      Prepare the Spinach and Yoghurt Dip:

        •       Heat a pot over medium heat. Add the spinach with a splash of water and cook for about 5 to 7 minutes, stirring occasionally, until the spinach is wilted.

        •       Remove from the heat, let cool slightly, then roughly chop the spinach.

        •       Transfer the chopped spinach to a mixing bowl, add the Greek yoghurt, and stir well. Season with salt and pepper to taste.

        2.      Make the Pea Pesto:

        •       In a food processor, blend the thawed peas, basil leaves, extra virgin olive oil, water, and garlic until smooth. Season with salt and pepper to your liking.

        3.      Assemble the Veggie Platter:

        •       Arrange the carrot sticks, cucumber sticks, celery sticks, yellow bell pepper slices, and cauliflower florets on a large platter.

        4.      To Serve:

        •       Place the spinach and yoghurt dip and the pea pesto in separate bowls on or next to the veggie platter.
