Roasted Beetroots and Lentil Salad
This Roasted Beet and Lentil Salad is a perfect plant-based dinner option that's both nutritious and satisfying. The earthy sweetness of roasted beets pairs beautifully with the protein-rich lentils, making it a hearty and wholesome meal.
This dish is full of fibre, antioxidants, and plant-based protein, making it ideal for supporting overall health, particularly during menopause.
Ingredients:
3 medium beets, peeled and cut into wedges
1 cup (200g) green or brown lentils, rinsed
4 cups (1 litre) water or vegetable broth
2 tablespoons (30ml) olive oil
1 tablespoon (15ml) balsamic vinegar
1 teaspoon Dijon mustard
1 garlic clove, minced
1/4 cup (40g) walnuts, toasted and chopped
2 cups (60g) arugula or mixed greens
Salt and pepper to taste
Optional: crumbled feta or goat cheese (if not strictly plant-based)
Instructions:
Roast the Beets:
Preheat your oven to 400°F (200°C).
Toss the beet wedges with 1 tablespoon of olive oil, salt, and pepper.
Spread the beets on a baking sheet and roast for 35-40 minutes, or until tender, flipping halfway through.
Cook the Lentils:
While the beets are roasting, cook the lentils. In a medium saucepan, bring the water or vegetable broth to a boil.
Add the lentils, reduce the heat to a simmer, and cook for 20-25 minutes until the lentils are tender but not mushy.
Drain any excess liquid and set the lentils aside to cool slightly.
Prepare the Dressing:
In a small bowl, whisk together the remaining 1 tablespoon of olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper.
Assemble the Salad:
In a large bowl, combine the roasted beets, cooked lentils, arugula or mixed greens, and walnuts.
Drizzle the dressing over the salad and toss gently to combine.
If using, sprinkle the crumbled feta or goat cheese on top.
Serve:
Serve the salad warm or at room temperature. This dish pairs well with crusty whole-grain bread for a complete meal.
