 Nutty Apple Delight with Blueberry Bliss: Grain-Free Bircher Porridge

Ingredients:

  • 1 ½ cups (180g) ground almonds

  • 1/4 cup (30g) ground flaxseed (linseed)

  • 1/2 cup (60g) desiccated coconut

  • 2 1/2 - 3 cups (600-700ml) plant-based milk

  • Add more milk if you prefer a looser consistency

  • 1/4 teaspoon sea salt

  • 1 teaspoon ground cinnamon

  • 2 medium-sized apples, coarsely grated (about 2 cups or 320g)

  • 2 cups (320g) diced strawberries

  • 1 1/2 cups (150g) raspberries

  • 2 cups (320g) blueberries

  • Juice of 1 lemon

  • 2 tablespoons water

Directions:

  1. In a bowl, whisk together the ground almonds, ground flaxseed, desiccated coconut, plant-based milk, sea salt, cinnamon, and grated apple. Cover the bowl and refrigerate overnight. The mixture will appear loose but will thicken as it rests.

  2. In the meantime, prepare the blueberry compote. In a pan, combine the blueberries, lemon juice, and water. Bring the mixture to a gentle simmer and cook for 5-7 minutes until the berries start to burst. Allow the compote to cool and thicken.
