Crispy Fennel and Chickpea One Pan Roast!

This dish is not only easy and quick to prepare, but also versatile. It’s perfect as a side to complement your favourite protein, or you can enjoy it on its own as a light and satisfying main. Ideal for those busy weeknights or a nutritious lunch, this recipe uses just a handful of basic ingredients and comes together effortlessly. Time to start cooking and enjoy!

Crispy Fennel and Chickpea one Pan Roast

Ingredients:

• 2 small fennel bulbs, thinly sliced (keep fronds for decoration)
• 350 ml (1 1/2 cups) cooked chickpeas
• 60 ml (1/4 cup) shallots, finely sliced
• 1 small lemon, half juiced and the other half cut into slices
• 2 teaspoons extra virgin olive oil
• Sea salt and black pepper, as per taste

Method:

1. Preheat your oven to 190ºC (375ºF) . Prepare a baking tray by lining it with parchment paper.
2. Arrange the sliced fennel, chickpeas, and shallots on the tray.
3. In a small bowl, whisk together the juice of half the lemon with the olive oil, a pinch of salt, and a sprinkle of black pepper. Drizzle this mixture over the fennel, chickpeas, and shallots, and toss gently to coat everything evenly .
4. Scatter the lemon slices around the tray .
5. Bake in the preheated oven for 25 minutes, or until the fennel is tender with a light golden hue and the chickpeas are crunchy.
6. Once done, take the tray out of the oven and garnish with reserved fennel fronds .
7. Serve warm and savour this delightful dish!
