Cottage Cheese Pancakes with Blueberries

 Start your morning with these delicious, protein-packed Cottage Cheese Pancakes! Light, fluffy, and naturally sweetened with fresh blueberries, they’re the perfect way to fuel your day.

 Ingredients: 

• 1/2 cup cottage cheese

 • 2 large eggs

 • 1/4 cup rolled oats

 • 1/4 tsp vanilla extract

 • 1/2 tsp baking powder

 • A handful of fresh blueberries

 • A drizzle of almond butter (optional)

 Method:

 1. Blend cottage cheese, eggs, oats, vanilla, and baking powder until smooth.

 2. Heat a non-stick skillet, pour in the batter, and cook for 2-3 minutes on each side until golden.

 3. Top with fresh blueberries and a drizzle of almond butter for an extra boost of flavour.
