Chia and Mango Pudding

With just a few ingredients, this delicious Mango Chia Pudding is sweet and creamy with bright tropical flavour. It is perfect for a quick, nutritious breakfast or even as a healthy dessert.

Ingredients

  • ½ cup chia seeds

  • 2 cups coconut cream

  • 6 tablespoons unsweetened coconut milk

  • ½ teaspoon vanilla extract

  • ¼ teaspoon ground cinnamon

  • 1 cup fresh or frozen mango

  • I tbsp of sunflower seeds

Directions

Place chia seeds in a bowl.

Whisk coconut milk, unsweetened coconut milk, vanilla extract, cinnamon and together in a bowl; pour over chia seeds and stir well. Allow coconut milk-chia seed mixture to soak until thickened, at least 20 minutes, or cover bowl and refrigerate overnight. Stir pudding and top with the mango and seeds. Enjoy!
