Ingredients:
• Eggs (as many as you like)
• Fresh spinach leaves
• Salt and pepper to taste
• A drizzle of olive oil (optional)
Instructions:
Boil the Eggs: Place your eggs in a saucepan and cover them with cold water. Bring the water to a boil, then reduce the heat and simmer for about 9 minutes for firm yet slightly creamy yolks.Prepare the Spinach: While the eggs are cooking, wash the spinach leaves and steam them until they are just wilted. You can use a steamer or simply put them in a covered pan with a splash of water.
Peel the Eggs: Once the eggs are done, cool them under cold running water to stop the cooking process, and then peel them.
Serve: Slice the boiled eggs in half and arrange them on a plate with the steamed spinach. Season with salt and pepper, and if you like, a drizzle of olive oil.
