Blueberry & Tofu Pudding

Ingredients:

8 oz (227 grams) firm tofu
1 cup (148 grams) blueberries, and some extra for topping
2 tablespoons (18 grams) chia seeds and nuts of your choice.

Instructions:

Place the tofu, blueberries, and chia seeds into a blender.


Blend for at least one minute or until you reach a very smooth consistency. Transfer the mixture into a serving dish.


Add a few blueberries on top for a nice garnish.

Cover and chill in the refrigerator for a minimum of 30 minutes to allow the pudding to set.
